Where Ilios is and what it feels like

Ilios sits at Km 5 on the Tourist Corridor, the stretch of highway between Cabo San Lucas and San José del Cabo. It opened in May 2025 and it is the fifth Ilios from Grupo Anderson's, joining Cancún, Playa del Carmen, Tulum and Orlando. If you have been to one of those, you know the vibe. If not, you are in for a surprise.

The building takes its cue from Greek temples, and the light glows warm through Grecian-style archways. It feels dressed up without feeling stiff. Chef Pedro Abascal leads the Ilios menu, and the food is modern Greek and Mediterranean, built around fresh seafood, grilled meats and a lot of things you will want to share.

Doors open at 5 pm every day and service runs well past midnight, so this is a dinner you can stretch out into a full night. Closing time can change, so confirm it when you book. If you are staying on the Corridor, it is right in your neighborhood.

The show: fire, Zorba and a lot of Opa!

  • Live music and belly dance. There is entertainment through the evening, so the room never goes flat between courses.
  • The fire show. The lights dim, the music builds and a performer comes out with a flaming torch, then another. The fire is timed to the music, and the dining room goes quiet to watch.
  • The Zorba dance. Then the energy flips. The Zorba kicks off and every table is invited to join. You can dance or you can cheer from your seat. Both count.
  • Plate smashing. The big Opa! moment. Plates hit the floor, the whole room shouts, and yes, you are invited to join in.

Ilios does not post exact show times online, so if you want to be seated before the fire starts, ask when you book. Our tip: plan to arrive early, order a round of mezze, and let the night build.

What to order

The show gets the photos, but the food is the reason you will come back. In 2026 Ilios Cabo was named one of the 100 Imperdibles México 2026, and the dish it highlights is the salt-crusted baked fish made with Mediterranean branzino. If your table is up for it, start there.

The evil-eye bracelet

As the night winds down, keep an eye out for the evil-eye bracelet. In Greek tradition the evil eye is a symbol of protection and good fortune, and Ilios uses it as a small keepsake to close out the night. It is a sweet touch after all that fire and noise.
