On the cliffs: the Corridor and Pedregal

This is the one people ask us about first. Sunset Monalisa sits at Km 6 on the Carretera Transpeninsular, with the bay in view and Land's End on the horizon. The new kitchen is modern, casual Italian, with handmade pasta, and Domenico Stile of two-Michelin-star Enoteca La Torre in Rome now advises the team.

The trick is the seating. The first seating is the sunset one. The second is for live Cuban music after dark on selected evenings. Then pick your area: the Upper Terrace for à la carte, the Premium front row on the lower terraces at the cliff edge for a tasting menu, or the Ocean Terrace, a small private nest for two to four with its own fire pit. Each area has its own prepayment terms on their site, so read them before you book. Open every day from 5 to 10:30 PM.

El Farallón

At El Farallón, inside Waldorf Astoria Los Cabos Pedregal, the tables are perched over the Pacific. The resort puts it best: champagne next to the freshest local catch while the waves crash below. The menu is ocean to table, and the wine and cocktail pairings are part of the show. Amara

Amara is a Baja restaurant and cocktail bar on a hillside in Cabo San Lucas, with the Sea of Cortez on the horizon. Chef Andrés Bracamontes runs a raw and oyster bar and steaks cooked over fire, and the wine list leans into Baja and Valle de Guadalupe. Amara says its cocktails are best at golden hour, and honestly, we take that as an order. Their site lists dinner every night except Wednesday, so confirm your night when you book. The Office on the Beach

SUR Beach House

SUR Beach House is the beach club of Bahia Hotel & Beach House, right on the sand of Medano. Think Baja-fresh seafood, craft cocktails, a curated wine list, and DJs with live saxophone. In their words, it is cocktails with dinner as the sun dips behind Land's End. Our move: show up in the afternoon and let a long lunch slide into a sunset dinner. It is open every day for breakfast, lunch and dinner.

Edith's

Edith's cooks Baja California food with a Guerrero twist: steaks, local fish and lobster, and hand-made tortillas, with candlelight and palapas facing Medano Beach and the Arch. Metate

Metate is not a sunset view. It is where we go once the sun is down. It sits across the highway from the hotels, down a dirt road in El Tezal, and the MICHELIN Guide describes a stone patio shaded by trees strung with lights, with an open-air kitchen and bar. The cooking is Mexican, built on the old molcajete and metate traditions. Open every day from 2 to 10 PM, phone +52 624 157 8760.

The San José del Cabo side

Cielomar at Viceroy

Cielomar is the rooftop at Viceroy Los Cabos, high above the coast with sweeping views of San José del Cabo and, in the hotel's words, front-row access to the sunset. As dusk settles, the open kitchen runs on smoke and wood fire, and a wood-burning pizza oven turns out pies under the open sky. Open 5:30 to 10 PM, closed Tuesday. HUMO at Zadún

HUMO is the contemporary grill at Zadún, a Ritz-Carlton Reserve, in Puerto Los Cabos. Local seafood, premium meats and plant-based dishes come off the fire, with ocean views, firepits, Mexican wines and live music. Start early, and stay for the part when the firepits glow.
