HUMO at Zadún: Why This Los Cabos Grill Is Named After Smoke
HUMO at Zadún cooks everything over fire. What reopened in 2025, the new executive chef, firepits, live music, Candil Agave Bar and how to book.

Humo is the Spanish word for smoke. So when a restaurant picks that as its name, you already know what it cares about. At HUMO, the contemporary grill inside Zadún, a Ritz-Carlton Reserve in Puerto Los Cabos, fire is the whole idea. It leads a menu of Sea of Cortez seafood, premium cuts and plant-based plates, and the night ends by the firepits with live music and the Sea of Cortez in front of you.
We get asked about HUMO a lot, so here is everything we know: why the name fits, what changed when it reopened, who runs the kitchens now, and how to get a table.
Why a restaurant named after smoke
HUMO calls its cooking philosophy "Homage to Fire." On its own site, the restaurant describes it as a celebration of embers, smoke and open flames, and a cuisine inspired by ancestral grilling traditions. In plain words: this is a grill, and the grill is the star.
The restaurant sums itself up as a place where the flavors of fire, sea and soil meet. That shows up on the menu as three big themes: responsibly sourced seafood from the Sea of Cortez, premium cuts, and plant-based dishes made with local ingredients. If you love the smell of a wood fire and food with a little char on it, you are in the right place.

What changed when HUMO reopened
HUMO reopened in November 2025 with a renewed focus on wood-fired international cuisine, according to Hospitality Net. The restaurant also calls its space "recently reimagined," with an open kitchen, private dining spaces and views across the Sea of Cortez.
So if you went a few years ago, it is worth a second visit. The fire is still the point. The room, and the way the kitchen uses that fire, got a refresh.
A new executive chef at Zadún
Zadún named Chef Victor Garrido as its Executive Chef, Hospitality Net reported. He leads the culinary program across the resort: HUMO, Equis, El Barrio, Candil Bar, in-room dining, private dining and banquets.
His résumé travels. Hospitality Net says he brings more than 28 years in hospitality and over 26 years in professional kitchens, with leadership roles in Mexico, Egypt, Ukraine, Saint Lucia, Turks and Caicos and the United States. His cooking background covers Mexican, French, Italian, Caribbean, Arab, Lebanese, Indian and Thai cuisines. That range lines up nicely with a grill that now leans international.

What to order at HUMO
HUMO gives you a few ways to eat, based on its menu page:
- À la carte. Pick your own mix of seafood, cuts and sides off the signature list.
- Tasting menu. Let the kitchen take the lead with a curated tasting menu. Great for a big night out.
- Plant-based creations. They get their own spot on the menu, so a meat-free table still eats well.
- Children's menu. Yes, you can bring the kids.
- Kosher menu. Available on request, and the restaurant says it can work with other dietary needs too. Ask when you book.
The wine list leans into Mexican labels, which is a fun chance to try bottles you will not find at home. Menus and prices change, so check the current menu before you go.
After sunset: firepits, live music and Candil Agave Bar
Here is how we would plan the night. Start at Candil Agave Bar, where the cocktails are built around Mexico's agave spirits. Hospitality Net describes the bar's style as "desert-inspired, boundary-pushing cocktail artistry," so go in curious.
Then head over to HUMO for dinner. Once the sun goes down, the firepits light up and live music starts, according to the restaurant. Book a table close to sunset and you get the whole show: golden light over the water, then the glow of the fire as it gets dark.
